Broth is widely recognised as the cornerstone of Asian cuisine; it makes sense then to begin your pilgrimage at Le Tran Café, a family owned restaurant that specialises in traditional Vietnamese and Asian dishes. People come here for the Papaya salad, the fresh summer rolls – pork, prawn, rice vermicelli and herbs coated in peanut hoisin sauce and wrapped in paper thin rice paper – and the unexpected "Salted Egg Yolk Quail", but they stay for the soups. Phở noodle soup, a Vietnamese traditional dish with flat rice noodles served in a broth robustly flavoured with cinnamon basil, lime, cilantro, bean sprouts and chilli – you can add your favourite meat or tofu – or our favourite, the Fish Cake Noodle Soup – rice vermicelli noodles and mouth watering turmeric fish cakes served in a rich and fragrant broth.
