Lobster is pure culinary heaven, something to spoil yourself with every now and then.

Whether you want to push the boat out or just crave a New England lobster roll, Lobster Café, Big Easy and Burger & Lobster all offer superb lobster dishes with their own twist to this gastronomic delight.

The lobster debate

There's no question that lobster is a wonderful thing, but with such delicate flavours, there's a few schools of thought for the best way to prepare and enjoy it. Some chefs prefer the classic French approach – lots of rich, creamy ingredients and maybe even a little cognac thrown in. Others prefer a lighter, more Asian-inspired take on things, complementing the lobster with fragrant flavours. Then there's the simple American method: browned butter and a squeeze of lemon.

Less than a hundred years ago, lobster was not as fancy as it is today. It was cheap and plentiful in the seaside towns on the east coast of North America, the canned variety eaten by poor people, indentured servants and prison inmates. But once railways began to spread westward, they began serving lobster to their land-locked passengers, who loved it and had no idea of its humble origins. Its popularity began to soar and savvy restaurants picked up on this and added it onto their menus. Supply fell, demand rose, and lobster got a new, cool image.

If you don't have time for all that shell cracking, the lobster roll is a great way to get to that sweet meat quickly. Burger & Lobster's version is served with Japanese mayo and lemon, the fresh citrus cutting through the rich mayo, lifting the overall delicate flavour. It's also served with fries, which are naughty, but very, very nice.

But when we need cheering up, we go for the luxurious Lobster Mac N Cheese by Big Easy. This is really a bucket list sort of dish. Carby pasta, rich, melty cheese and white sauce combine with the freshly cooked lobster for a brilliant mix of comfort and decadence.

Equally rich but with a slightly more continental feel to it is Lobster Café's Whole Lobster in Garlic Butter Sauce with King Prawns. It comes with grilled cheese and crispy hand cut Maris Piper chips. They also do a Thai Green Half lobster with jasmine rice, channelling fragrant Asian flavours for a lighter dish.
